Please accept this letter as a strong referral of Chef Christophe Kwiatkowsky (Chef Christophe). Chef Christophe served as the head Chef and general manager for the VIP Lounge during the 1999 Canadian Airlines Chinese New Year Festival at the Plaza of Nations. The Festival was awarded "Best Festival" in Canada and saw approximately 148,000 visitors over three days.
Chef Christophe has served as the head chef and organizer of the exclusive Festival VIP Lounge for the past two years. The VIP Lounge saw an attendance of over 2000 corporate visitors over a 3 days period.
Chef Christophe provided outstanding service in less than ideal circumstances. He had to cope with a shared kitchen with the Festival Food Court Vendors which left Chef Christophe with less than ideal cooking facilities with which to complete his responsibilities in a timely and effective manner. Chef Christophe worked in a collaborative manner with all involved (the vendors) and was able to provide an outstanding Chinese New Year buffet in the VIP Lounge. The buffet was fully serviced and operational ten hours per day for three days. Many of the Festival visitors commented on Chef Christophe's personal service, the quality of the display and the amazing quality and variety of Chinese food.
The success of the Festival VIP Lounge was due to Chef Christophe's personal attention to detail, the negotiations he conducted on our behalf with food sponsors and his great energy and enthusiasm he brings to his profession.
East Meats West was very happy to have Chef Christophe and his staff host the VIP Lounge during the Chinese New Year and I strongly recommend his services.

Over nine hundred competitors and delegates from across the country were present at the Queen Elizabeth Theatre, yet your staff was able to effectively ensure that all were served swiftly and politely. In addition, you were chosen to cater VIP Reception, also at the Queen Elizabeth Theatre, where over fifty guests were treated to a delectable array of hors d'oeuvres.

Dear Chef Christophe,
Neema and I from time to time reflect on our wedding and recall what a beautiful day it was. The sun was out, it was warm as a summer day, and the church courtyard had been beautifully set up. The buffet was memorable. The food was beautifully displayed: a feast for the eye had been carefully laid out. We shared the wonderful variety of flavours that made up the brunch. As you know, we had a broad range of needs for our guests. Some vegetarian, some wanted a traditional brunch, while others required spicy food. You designed a menu that met this spectrum of diverse tastes. The food was fantastic; many of our guests told us so.
Since our first meeting in San Francisco, we appreciated how attentively you listen, how passionate you were about your profession, and how responsive you were to us.You kept track of, and executed all the details of the event beyond our expectations. You anticipated and took care of those things that came up at the last minute. We couldn't have been more pleased with all you did to make a beautiful wedding reception. Your staff was professional and hard working throughout the event.
It is remarkable that a successful reception was planned long distance between San Francisco and Vancouver through our email exchanges during the year.
As I prepare this letter, I look forward to having you cater my mother's 70th Birthday party this summer. We wish you every success in your future endeavors Chef Christophe and will give you our highest recommendation to our friends. We look forward to seeing you soon.
